Hello.. Yum. { Corn, Pea & Carrot Fritters }

Hi friends happy Wednesday :) Well the little munchkin is home from hospital safe and sound! We brought my niece home this afternoon after three days in the children's ward, and as I watched this little champion maneuver herself into the car, out of the car, and all the while carrying 10kgs of plaster around her tiny broken leg, I was brimming with pride at how brave she was being. It's difficult watching anyone suffer, but as an adult, watching a child struggle and try to reconcile what is actually happening to their body, makes you wish you could take their pain for yourself. And just as I wrote that, I thought of Jesus.. because that's exactly what He did for you and me. Pretty amazing hey. :) So I'm excited to be launching a brand new series called "Hello.. Yum." where I will share some of my favourite recipes. Anyway, last night I decided to make tonight's dinner for my sis. So here's what I made: super-healthy, ultra delish (10-year-olds-will-not-notice-how-many-veggies-are-in-them) Corn, Pea and Carrot Fritters ~ my slightly 'tweaked' rendition of Theresa Cutter's fabulous Green Pea Fritters.
They are SUPER easy. In a bowl, put 300g of peas and corn (cooked and smashed up) along with 2 grated carrots and a pinch of sea salt. Let that sit for 10 minutes. (If it's really watery, grab some of the mixture and squeeze some of the juice out in your hand).
Add in the zest of one lemon and 2 tbsp of fresh parsley, along with 2 eggs and 2 tbsp spelt flour (Theresa's recipe suggests coconut flour, but I only had spelt!)

Heat your pan with half a tspn of organic coconut oil and spoon mixture on in small circles.
(You should fit 4 or 5 fritters on the one pan).
Cook on a low, gentle heat until they are cooked through.
And then serve with a yummy green salad. So there you have it! Corn, Pea and Carrot Fritters. And the best part is, you can actually use whatever is in your fridge. Ie/ if you don't have the exact vegetables, don't worry, you can always substitute and use whatever you have. They always taste fab whatever you put in them!

5 Minute Vacation { New York City }

Happy New York Tuesday! I just thought it was the kind of day to go to New York, wouldn't you agree? My little niece broke her leg (poor poppet!) on the weekend, so, I think today's post can be dedicated to my champion sister, who most definitely deserves a "Mother of the Year" trophy after her stellar performance as a superstar-mummy this weekend! Have you or your little ones ever had a broken leg? Any tips or helpful hints to get a ten year old through 8 weeks in a cast? Anyway, lets all go to NY today. First stop.. let's grab a coffee and stroll through Madison Square Park, as the Flatiron peers over our shoulders. ;)
And we're not just going to cross the Brooklyn Bridge.. check out this incredible post from A Cup of Jo, where Joanna Goddard shares 10 Amazing Things To Do in NYC (not your typical touristy things!) Having been to NY twice, her guide was a breath of fresh air and I am looking forward to doing some of these things when I am there!

We'll poke around here in search of some vintage gems at 'The Upper Rust' in the East Village.
Then stay a few nights here in St Mark's Place.
Then we'll head up to this penthouse rooftop for a bit of rest and relaxation.
Before wandering to the glorious Ladies Pavillion in Central Park.
Perfect for a rest stop. Stunning!
Finished by a delectable dinner here  at the Gramercy Park Hotel.
And just lastly, in my opinion, The Chrysler Building is the prettiest in New York City. Just  look at how she just glimmers and glows, her spire piercing the evening sky above.

Friday Fashionista :: Paris street style.

Hi hi ma lovelies! It's Friiiiidayyyyy woo hoo! What have you got planned for this weekend? I am celebrating my nanny's 91st birthday on Sunday.. what an achievement! So excited to honour and spoil her. :) So today, I thought we'd take a trip to Paris for some fabulous European fashion inspiration. I am really loving grey coats this season.. I think they are much softer than black don't you think?
And here's grey again.. charcoal with denim and tan for the boys..
French stripes, dangling beauties and a pop of red.
Love everything about this. Grey, faded denim, green and more grey. Excellent.
Black leather with skinnies and pointies - chic and slick.
And two outfits for the boys -- gone are the days of full length pants!

New strength today.

Hi friends happy Wednesday :) Sorry I have been a little bit MIA over the past few days! I've been busy moving house, moving furniture into storage, sorting out clothes for my trip, cleaning my old house.. (and for those who have done that before, would totally agree it is not fun!!) Anyway, suffice to say my little eyes are slightly swollen, just a tad puffy, and my body is cheekily whispering to me "ummmm.. excuse me.. just wondering when we're going to rest?" :)
Of course resting is essential (and I will be doing that believe me), but while "lying down" or "sleeping in" may give you some rest, it doesn't take away your weariness and give you new strength. No. There is only One who can do this, only One who can lead us into this kind of supernatural exchange...
What season of life are you in at the moment? Do you need extra strength today? Well good news! The creator of the entire universe, the One who knit you together in your mother's womb and knows every secret desire and dream of your heart, (even that one you thought of just when you read that!) is there with you right now, wherever it is you are reading this post.. and guess what...? He has NEW strength for you today.
It says in the bible that those who wait upon the Lord, their strength will be renewed. 
.... And so our job is to wait expectantly. :)
And receive His joy. :)
So my challenge to us today, is to wait. To steal a few moments and just wait on Him.
Because He is true to His word and He will bring strength. 
Today is going to be a great day! Our Dad in heaven loves us so much and has wonderful surprises in store for us. Tell me, what are YOU expecting to happen to you today?

Friday Fashionista :: Emerald green loveliness.

Can you believe it's Friday again?! It feels like yesterday I was sharing all that fabulous Winter Inspiration from last week's Friday Fashionista. :) Anyway here we are again and today's feature is on special request. So sit back, relax and scroll through this sea of sparkling Emerald Green prettiness!
Love this fedora. I think I wore mine almost every second day this summer. Green chiffon, aviators, gold skinny belt, fringe bucket bag, gold jewellery, studded pumps = what a great outfit.  
Love how the colour pops against Emma Stone's beautiful hair!
Fabulously sparkly pants teamed with classic demin and gold flats. Love it.
I wonder if they brought the umbrellas in to match.. ;)
Preppy emerald. A winner with tartan and navy.
And again for the boys, emerald with tartan. 
For the girls, rock it with cream, cobalt blue and tan.
Love this shade of green.. So lovely against dark denim and red rimmed shades.

And again, above and below.. teamed with faded denim = perfection! 
Love the leopard skinny belt and all these lovely jewels.

I'm on the hunt for more of these chunky scarves.. they are SO versatile!

And to finish, this stunning outfit was featured as part of Harper's Bazaar's London Fashion Week Fall Street Style 2013. The textures of the skirt and this exquisite coat are just divine!
